What Chef David Hoene really likes as owner of Pauline’s Café is the opportunity to know his customers better. He purchased Pauline’s two years
ago (after working there for eight years) and now takes advantage of being able to circulate among and talk with diners.
While the menu remains fairly traditional, there are always interesting items where Chef David exercises his creativity. He loves working with
seafood, game and wild foods. He wants his customers to be able to experiment. Availability of locally-grown produce results in menu changes about
every six weeks (Pauline’s menu is available online). Chef David continues to add more local producers as a way to “participate in a cycle of prosperity
by investing in my neighbors’ success”.
He likes his wait staff to act as facilitators for the customer. As much as they are order-takers, it’s also their job to be pro-active and communicate
with diners, to talk about the menu, the wine list, and to solve problems. Chef David encourages his staff to step in if they think a customer is
not perfectly happy with their meal; he says the “solutions are often simple and easily remedied” if the problem is approached in a proactive manor.
Pauline’s has ample space for private parties of up to 65 people in three upstairs rooms, which does not interfere with the first floor diners. They
also conduct wine tastings with expert presenters and small tastes of food from 5:30 – 7 pm – we’ll let you know when. Make Pauline’s your meeting
