Owner Emily Betz discovered an affinity for searching out interesting wines after starting her restaurant career in the kitchen. She is “always
tweaking” Bistro Sauce’s wine list as she discovers interesting small production wineries that use sustainably grown grapes. Her staff is kept up
to date on the wine selection and can bring diners a taste of a recommended bottle. Check out the extensive wine (and beer) list on the website

Equally important is the food - Chef Chris Hechanova works with as many local farms as possible and the menu (also on the website) changes weekly
to reflect what’s available. A glance at the lunch and dinner menu reveals a wide variety of tempting meat, poultry and veg dishes. He has cooked
at Kitchen Table Bistro in Richmond and owned Big Chili Republic in Winooski.
Emily, a NECI graduate, opened Bistro Sauce in May 2005. The ambiance is comfortable and unfussy and many customers are regulars for lunch or dinner.
Sauce’s staff works to know their customers and what makes them happy.
Live jazz or folk music on Monday and Thursday from 6:30-8:30, is quiet enough to allow conversation.
Sunday Brunch and patio dining will return with warmer weather. |
